Hey Gabe, while you're in the Northern Territory, you should try some traditional Indigenous food known as Bush Tucker. The Australian Aboriginals have lived in the Northern Territory desert for tens of thousands of years, they know where to get the good stuff. A local favourite is the Witchetty Grub.

Obviously you have to visit Uluru (Ayers Rock) but please don't climb it! Uluru has great spiritual significance to the local Indigenous people and climbing it would be very offensive.
Nearby (in desert terms) is Kata Tjuta (The Olgas) which is not as big, but equally impressive.
Just being in the desert is an incredible experience in itself. Admire the red, red and more red for miles and miles.

Gabe - be sure to get yourself a "Darwin Stubbie". It is local beer but in a unique size bottle - hope your thirsty! Also have some Barramundi fish and croc steaks you will.
